INGRIDIENTS
1000 gMixture for curds
1000 gWater (Hot 70οC)
1000 gCrystal sugar
1000 gPowdered sugar

APPLICATION

Put the water in the mixer and add the meringue mixture and granulated sugar. Whisk on the fast speed until the mixture is fluffy and stable. Add the icing sugar gently with a spatula. We color at will or add ingredients of our choice such as grated nuts. We create shapes for meringues or decorate meringues. Bake at 100C for 1-2 hours depending on the size of the products.
