500 gWheat flour 55%
500 gWheat flour 70% Strong
900-1000 mlWater
120grFresh Yeast

APPLICATION

Knead all the ingredients together for 4 minutes on 1st speed and 13 minutes +/- 2 minutes on 2nd speed. Desired dough temperature is 25-26o C. Let the dough rest for 30 minutes and then cut into balls depending on the amount that the puff pastry machine works. Cover the balls and let them rest for another 15 minutes. Then work on the puff pastry machine and shape it to the desired shape and weight. Put in the stove for 60 minutes at a temperature of 32 C and at a relative humidity of 75-80%. Fry at 190oC +/- 5 οC for about 1 minute on each side.
