Knead all the ingredients in a mixer for 3 minutes on slow and 7 minutes on fast speed until you have a smooth dough. Desired dough temperature 25-26C. Rest the dough for 15 minutes. Cut into pieces of 60 g and let rest for another 15 minutes. Shape into balls and bake for 50 minutes at 36oC with a relative humidity of 80%. Brush with egg and bake on 200-220C for 8-10 minutes depending on the type of oven.
